Ingredients

  • 1 tbsp 1 tbsp chili powder
  • 1 tbsp 1 tbsp paprika powder
  • 2 tsp 2 tsp dried oregano
  • 2 tsp 2 tsp ground cumin
  • 1 tsp 1 tsp salt
  • 1½ lbs 650 g chicken breast, sliced into stripschicken breasts, sliced into strips
  • 1 (4 oz.) 1 (120 g) sliced red bell peppersliced red bell peppers
  • 1 (4 oz.) 1 (110 g) yellow onion, slicedyellow onions, sliced
  • 2 2 garlic clove mincedgarlic cloves minced
  • ¼ cup 60 ml olive oil
  • 2 tbsp 2 tbsp lime juice
  • 1 oz. (1¾ cups) 28 g (425 ml) fresh cilantro, for garnish

Making low carb simple

Instructions

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Mix the chili powder, paprika, oregano, cumin, and salt in a small bowl and set aside.

  3. Put the chicken strips, bell peppers, onion, garlic, oil, and lime juice in a large bowl and mix to distribute the oil and lime juice thoroughly. Sprinkle in the spice mixture and toss to coat the chicken and vegetables.

  4. Spread the seasoned chicken and veggies on the sheet pan in a single layer. Bake for 20-25 minutes, stirring halfway through the baking time until the chicken is cooked through and tender. If you enjoy a little char on your fajitas, you can place the pan under the broiler for 3 to 5 minutes at the end before serving.

  5. Garnish with fresh cilantro and serve.

Tip

Refrigerate leftovers for up to 5 days.

Make a double batch of the spice mix and store it in the refrigerator to make fajitas even more quickly.

Keto sheet pan beef fajitas?

Use beef instead of chicken for variety. Sirloin steak strips cook a bit faster than chicken. The beef is typically cooked and tender within 14 to 17 minutes.

You can also use shrimp, but because shrimp cooks so quickly, you might choose to add it after the vegetables have cooked for 10-15 minutes.

Make a keto or low carb fajita bar

Feeding a crowd? Make a fajita bar with toppings such as sour cream, shredded cheese, diced tomatoes, fresh avocado, or guacamole.

Guests might also enjoy some salsa verde or homemade tortillas with their meal.

    Thanak you for delicious receipe, BUT leftovers up to 5 days is too long,
    I think a maximum of 3-4 days in the fridge is very well covered.

    Delish. Even my non Keto hubby wants it again. Bought some egg wraps and with sour cream I had a fajita that was tasty in all ways. Hubby piled it on rice. I will make a bulk seasoning mix for even faster prep and use it as a salad protein as well. Thanks.

    They are wraps (like tortillas) made of eggs. I believe there is a brand called Egglife that's available in some stores or you can make your own!

    Great recipe. I did it in a convection oven on a preheated stoneware pan and it took almost half the time ! Finished under the broiler as suggested. I had with a dab sour cream and guacamole- non keto people had in tortillas with cheese. Easy to make for the family if you are keto and they are not

    I don't think that the texture of the canned chicken or beef would be pleasant in this dish.

    Great tip! You could definitely marinate these overnight to make it even quicker when you're ready to get everything in the oven.

    The heat level in this dish depends a lot on how spicy your chili powder is. If you prefer, you can use less of the chili powder or omit it if you make these milder. You could substitute some smoked paprika instead which will add a different flavor without the heat.

    Absolutely delicious, non keto hubby loved it as well, he piled in wholemeal wraps and I piled in lo-dough wraps. Have already made this twice this week as so easy to prepare and cook. I marinate over night and serve with the diet doctor guacamole, some homemade tomato salsa, grated cheese and sour cream, heaven on a plate thank you!!

    Loving these sheet pan receipes! This was great and will be added to our regular menu. I did as suggested and made a double batch of the spices so next time will be even easier. I didn't have chicken breast and don't really care for them, so used chicken thighs instead. I just cut the bone out with kitchen scissors, removed the skin, and sliced it up. Then cooked the skin on a seperate baking sheet for a nice little appetizer or side.

    Fabulous recipe. I made it exactly as in the recipe. Instead of breasts, I bought raw chicken tenders (cheaper) and cut them smaller to be fajita sized, and everything was really delicious. Great combination of space flavors, too! Husband and son gave a happy thumbs up and want to have this dish again. Easy to prepare, too.

    We all thought this was bland. Ended up having to put seasoning salt and sour cream on it to make it edible. Plus when the food was cooking it was swimming in juice. I tried to broil it but that just made the chicken tough. I ended up removing all the chicken pieces and broiling just the peppers to get some flavor in them. Maybe if you cooked it at 450F it would turn out better and less boiled. Was filling though at least.
